Tuscan Schiacciata Bread – a taste journey to Florence

Attractive. Rustic. Perfect for filling.

Schiacciata is a Tuscan street food classic that charms with its crispy crust and airy texture. The deep-baked and pre-sliced Italian bread is designed to be filled – it brings both flavor and an authentic feel of Tuscan bread culture to the dish.
The rustic appearance of Schiacciata makes the bread an impressive dish, and its structure allows the product to withstand even generous fillings. The perfect choice for filled premium breads!

Schiacciata or focaccia – what’s the difference?

In Tuscany, Schiacciata is available in every bakery, and all the locals know it. You could call it “Tuscan focaccia” – both have a similar dough, in which olive oil and salt play an important role.

The difference between the breads comes from the way they are made:
- Schiacciata is flatter, thinner and crunchier, because it is stretched and pressed before baking, and its rising time is shorter.
- Focaccia is thicker, fluffier and airier.

Schiacciata's crispy surface and denser interior make it an excellent base for filled breads – it won't crumble, even with rich fillings.
