Located in Tallinn, Estonia, THORMI is leading the regional transition toward sustainable, European-sourced plant-based food innovation.
We develop and produce pea protein TVP (Textured Vegetable Protein) and HME (High-Moisture Extrusion) which serve as functional plant-based core ingredients both for human-grade gourmet foods and premium pet foods.
Convenient-to-use and essentially ready-to-consume, our TVP and HME require no intensive thermal processing while delivering an outstanding texture, authentic mouthfeel, and a delicious taste experience.

THORMI HME 3.0 (Pea Protein High-Moisture Extrusion)
THORMI HME Version 3.0 is a next-generation high-moisture extruded (HME) plant-based protein made from European-grown pea protein. The product has been developed in collaboration with internationally recognised food scientists and functions as a clean-label, versatile core ingredient for both human-grade gourmet foods and premium pet food applications. THORMI HME is convenient to use and essentially ready to consume, requiring no intensive thermal processing. It delivers an exceptionally tender, fibrous and juicy texture, an authentic mouthfeel, and a naturally pleasant taste. Thanks to advanced process optimisation, meat-like structures are achieved without the use of additives, binders or texturising agents. The product is 100% GMO-free, allergen-free and rich in high-quality plant protein. It is suitable for food industry, foodservice, HoReCa and specialised institutional catering. Its versatility enables a wide range of applications, including pulled and shredded-style products, sauces, grill and BBQ solutions, plant-based and hybrid burger patties and meatballs, minced-meat-style products and sausages, pizza toppings, wrap and burrito fillings, baked fillings, as well as warm and cold salad components. In addition to mainstream food applications, THORMI HME is used in the production of long-shelf-life, highly nutritious plant-based military rations and survival and emergency food kits designed for extreme conditions and crisis zones. An earlier generation of THORMI HME was used in the product “Shredded Chickenless in Coconut-Curry Sauce”, which won the Gulfood Innovation Award 2025 in Dubai in the Best Ready-to-Eat Product category. Compared to earlier versions, version 3.0 achieves complete flavour neutrality. The previously detectable pea aftertaste has been fully eliminated, even for highly sensitive tasters. The product offers a natural umami taste, an exceptionally tender and juicy texture, and is easy to season, marinate and smoke.

THORMI TVP Mince 65-70% Protein
THORMI TVP Mince is a high-quality dry textured vegetable protein (protein content 65-70%) produced from EU-origin pea protein using advanced extrusion technology. Manufactured by OÜ Vegestar in Estonia, it is a clean-label, plant-based protein ingredient designed for versatile food applications requiring a minced-meat-like texture with high nutritional value. The product is light beige in colour with a mild, neutral aroma and a clean, pleasant plant protein taste, free from off-flavours. In its dry form, THORMI TVP Mince is light and crunchy, making it suitable not only for further processing but also for direct consumption as a high-protein crunchy ingredient. When rehydrated, the product expands efficiently and delivers a fibrous, juicy texture that closely mimics traditional minced meat, providing a satisfying bite and chew. The structure consists of short, twisted and porous strands with an irregular, curly surface, forming soft, meaty fragments after hydration. Typical applications include bolognese sauces, tacos, plant-based burgers and patties, lasagna, stuffed vegetables and virtually any recipe where minced meat is traditionally used. Thanks to its neutral taste and crunchy dry texture, it can also be consumed directly as a healthy, high-protein snack, mixed into cereals, granola or trail mixes, combined with dried fruits or vegetables, or used as a topping in breakfast bowls with milk, plant-based drinks, yogurt or kefir. THORMI TVP Mince is an extremely versatile ingredient suitable for innovative food concepts ranging from protein-enriched snacks and ready-to-eat products to salad toppings and selected pet food applications. Typical hydration ratio is 1:2.5 (TVP:water), with significant volume expansion upon soaking. NB!
