Västerbottensost® is a crumbly, characteristic and strongly aromatic hard cheese that has been matured for at least 14 months. The characteristic tangy taste of the cheese has
a hint of truffle and umami. Västerbottensost is still shrouded in mystery as to why it can be produced only at the Burträsk dairy in Sweden. The recipe was born by chance in 1872 and is still a well-kept secret.
